Christmas Morning Pancakes

I am a pancake fiend; I can have pancakes at any time of day, every day and not get tired!
I recently just became vegetarian and maybe eventually commit to being full vegan (it is sooo hard though) therefore I like to look for vegan recipes to try here and there. There are a couple of people that I follow on social media that have amazing Vegan books, Isa Chandra Moskowitz is one of my favorite! I was looking through her new book “The superfun Times Vegan Holiday Cookbook” and found Banana Eggnog Pancakes!!! I’m one of those people that love Eggnog Tea lattes and have them pretty much every day in December, so Eggnog and Pancakes combined is a little piece of heaven to me.
Ingredients
2 very ripe medium bananas 1 1/4 cups eggnog 2 tablespoons organic canola oil (or other light tasting oil) 2 teaspoons apple cider vinegar 1 teaspoon pure vanilla extract
1 cup all-purpose flour 2 1/4 teaspoons baking powder 1/2 teaspoon fresh grated nutmeg (plus extra for sprinkling) 1/4 teaspoon salt
To serve: Banana slices, cranberries, pure maple syrup
In the recipe she used So Delicious Coconut Eggnog but I used Silk Almond Nog and it worked perfectly.
The Instructions are very simple:
Combine wet ingredients and dry ingredients on separate bowls and then just mix together being careful not to over mix!
Let the batter rest for a couple of minutes.
Go on to cook as you would any pancaked using 1/4 c of the batter per pancake.
I believe this would be a great addition to any Christmas morning breakfast. The outcome is so fluffy and delicious I will probably make it a couple more times before “Eggnog Season” is over.
