January 2017 Favorite Recipes

First month of 2017 is over, can you believe it?! January definitely flew by for me.

Thanks to my cookbook obsession I have been eating very good food lately. It’s so hard to choose, there were so many great recipes!! This is the roundup of my favorite January 2017 foods!

Breakfast: Banana Pancake Yogurt Bowl

This amazing concoction was created by my mother. I used the recipe for Thug Kitchen’s “Whole Wheat Banana pancake”; I didn’t have whole wheat so I just used regular all-purpose flour.

Pancakes (Makes about 12):

  • 2 ½ C Flour

  • 2-4 Drops of French Vanilla Stevia (or to taste)

  • ½ tsp Salt

  • 2 C nondairy milk

  • 1 small banana (mashed)

  • Coconut oil (for cooking)

Berry Jam (Makes about 1 ¼ C)

  • 1 C Berries

  • 4-5 drops of stevia (to taste)

  • 2 tbs chia seeds

Assembly:

  1. Pancakes (small about 3-4 inches?)

  2. Berry jam

  3. Coconut yogurt (or cream)

  4. Fresh berries,

  5. Goji berries

  6. Bee pollen (optional, leave out to keep recipe vegan)

Lunch: Baja Fish “Mushroom” Tacos with Mango Salsa (serves 4)

The versatility of mushrooms never fails to amaze me. I was looking for different ways to use mushrooms and I came across this little gem. I must say it’s not the “healthiest” way to eat mushroom but it’s a fun different way to enjoy it once in a while. Maybe I'll try baking it next time to see how it works out… hmmm

Fish “Mushroom” tacos

  • ¾ C All-purpose flour

  • 1 tbs Seaweed

  • 1 ½ tsp Pepper

  • 1 tsp Salt

  • 1 tsp Garlic Powder

  • ¼- ½ C nondairy Milk

  • 4 Eggs worth (Egg replacer, flaxseed eggs, whatever you like)

  • 1-2 C Mushrooms (Oyster or Portabella)

  • Oil for Frying

  • 8 Tortillas

**If you don’t add kelp it tastes like fried chicken!

Mango Salsa:

  • 1 C Mango

  • ½ Red onion

  • 1 tbs Lime Juice

  • 1 tbs fresh Cilantro

  • Salt to taste

  • 1 Small Jalapeño (or 1 tsp cayenne)

Snack: Avocado Basil Whip (serves 4)

If your New Year’s resolution was to eat healthier and you are getting tired of all the salad THIS is the perfect recipe for you!! It is so incredibly fluffy and creamy, takes salad to a different level!

The original recipe calls for fresh oregano, but I couldn’t find any, therefore I added spinach instead. Still very delicious!

Smoothie Ingredients:

  • ½ avocado

  • 1 (1 inch) piece of Turmeric

  • 1 C Fresh Basil

  • 1 C Coconut yogurt (or ream)

  • 1 Handful of Spinach

  • 1 tsp Rosemary

  • Pinch of fresh black pepper

Toppings:

  • ½ Handful of Spinach

  • 2 tbs Sliced Almonds

  • Pinch black pepper

  • 8 Multi Grain crackers (or your fav crackers)

Dinner: Creamy Baked Pasta with Kale and Parmesan (Serves 4)

Got a whole bunch of Kale? Kale is not only for salads, including them in your favorite dishes is a great idea to ease into “healthier” eating. I love pasta so this combo was perfect for me. I used cheese tortellini, but obviously to keep it healthier use whole wheat or vegetable pasta.

Ingredients:

  • ¾ lb Pasta

  • ½ lb Italian Sausage (I used Vegetarian sausage)

  • 2 tbs Olive Oil

  • 1 Bunch of kale, plus moreeeee!

  • 1 Can diced Tomatoes

  • 2/3 C Heavy Cream

  • 4 oz Asiago Cheese

  • 2 oz Fresh grated Parmesan, plus more to serve

  • Salt & Pepper to taste

Dessert: Vanilla Bean Pot de Crème (serves 2)

I always make space for a sweet treat. I don’t think it’s good to deprive yourself from the things you enjoy, got a sweet tooth? Indulge with this perfect dessert smoothie! Everything in moderation, that is the key to succeed a healthy balanced life style. I believe in treating yourself once in a while, that being said I don’t think you should stuff your face with anything, I would suggest a treat made with high quality ingredients made by yourself so that YOU are in charge of your intake.

Smoothie Ingredients:

  • 2 Bananas, peeled

  • 1 c coconut Milk Yogurt (or cream)

  • ¼ Hemp Seeds

  • 2 tbs Protein Powder

  • 2 tsp vanilla extract (I used Almond, it was Delicious!)

  • Pinch of Salt

Toppings:

  • Strawberries

  • 2 tbs Sliced Almonds

  • 2 tbs Unsweetened Coconut flakes

Drink: Ginger Golden Milkshake (Serves 1)

Who doesn’t love Milkshakes?! This inspiration came from a Califa Farms “Ginger Almond Milk, Turmeric Spice Blends”. This is still a work in progress, but I was so proud of how gingery and creamy it tasted, and the color is incredibly bright and happy looking!

Ingredients:

  • 1 ¼ C nondairy Milk

  • ¼ C Soaked Cashews

  • 1 tsp Turmeric

  • ½ tsp Fresh Ginger

  • 1 tsp Cinnamon

  • 2 tbs Coconut cream

  • ½ tsp Probiotic Powder

  • 1 tsp Lucuma Powder

  • 1 tsp Vanilla Extract

  • 2-4 Drops of French Vanilla Stevia

  • Couple Ice Cubes (or Milk cubes to remain creamy)

  • Pinch of Pepper
